Hearty Sun-dried Tomato Hummus Recipe
Recipe for Sun-dried Tomato Hummus

Ingredients:
- 2 fifteen-ounce cans of chickpeas, not drained
- 3 cloves garlic
- 1/4 cup tahini (sesame seed butter)
- 1 tbsp. extra-virgin olive oil
- 1/4 cup lemon juice
- 3 tbsp. water
- 1/4 salt
- ¼ cup sundried tomatoes
Special additions
- ¼ cup lemon juice
- Cilantro
- Red bell pepper
Directions for sun-dried tomato hummus:
Drain the chickpeas, reserving 1/4 cup of the liquid. In a food processor, mince the garlic, then add the rest of the ingredients, plus the chickpea liquid. Process for about 3 minutes or until smooth. Serve with raw vegetables or whole wheat pita triangles. Refrigerate any unused portion.
